This is the pata negra, the black leg. Our iberico comes from Guijuelo, beside Salamanca.
Pedro Nieto is a family business located in the Guijuelo area (Salamanca, Spain) that
is involved in the traditional production of Iberian acorn-favoured hams and sausages.
This company has been in existence for three generations that have specialised
in the elaboration of Iberian pork products. Over the years they have perfected their work methods
