It may seem that the wines of J.P. & Benoît Droin need no introduction – their distinctive, stylish labels displaying the range of 1er and Grand Cru bottlings, look familiar to many of us. Without doubt, this is a well-established Domaine, firmly positioned among the leading producers in Chablis.

But, as always, we like to look behind the labels... In this case, discovering a young, energetic winemaker, who not only follows in the footsteps of his father, but also puts his own stamp on the wines he makes. Benoît is the 13th generation carrying on the family legacy and making wines in Chablis. He farms 26 hectares of Chardonnay, with parcels in nine 1er Crus on both banks of Serein, five Grand Crus, Chablis Village mostly on Kimmeridgian limestone and Petit Chablis. Searching for site expression, precision, and freshness, he reduced the proportion of wood, reserving the new oak barrels for the Grand Cru bottlings.

Thomas is a third generation wine grower in Chablis. The winery is based in Courgis where, apart from Pico’s family, the only other grower to bottle their wine themselves are Pico’s mentors, Alice and Olive de Moor.

Thomas is one of the few producers in Chablis to farm his vineyards organically and harvest by hand. Organic certification (a real challenge in Chablis!) was completed in 2009 and biodynamic principles are followed all through the year.

Pico’s wines are unfiltered and vinified without any additives. He lets them ferment naturally and uses just a little SO2 for stabilization. In recent years Thomas is aiming at longer elevage of a minimum 18 months before the release.

Alice and Olivier de Moor – are without a doubt among the most respected and thoughtful vignerons in Burgundy! The pair met after graduating from enology. In 1989 Olivier had planted vines on few bare slopes, he inherited from his grandfather, in the village of Courgis, at the south-western edge of the AOC Chablis. Alice, originally from Jura, had joined him and in 1995 they have released their first vintage. Starting without any preconceived idea, other than the desire to make wines which were not “corrected” in any way, over the years they have managed to create a highly personal range of sublime, mouthwatering wines which nowadays enjoy a cult status.

Currently Olivier and Alice farm around 7 hectares of Chardonnay, Aligoté and Sauvignon Blanc in AOC: Chablis, Bourgogne and Saint Bris with some vines dating back to 1902! While Olivier spends most of his time looking after the vineyards, Alice oversees the winemaking. Her intuitive, minimalistic approach seems to be in tune with her husband’s sensitive and holistic outlook on the vineyard as part of a wider ecosystem. Olivier firmly believes in urgent need to reinstate the subtle connection between the plants (trees, hedges, grass, vines) to combat “desertification” of the landscape, provide coolness and water supply in the soil. “Let life come back anywhere it can!” – he sums up his point of view.

Approximately ninety minutes’ drive north from Beaune, last January, we have found ourselves in the beautiful countryside of the elevated plain of the Morvan. Deep in the northern half of the Morvan (about 45 minutes due southwest from Chablis) lies the ancient, yet very picturesque village of Vézeley.

While the climate here is slightly cooler than in Chablis, the vines enjoy great sun exposure, producing a balance between generous fruit and deep mineral structure. La Soeur Cadette, under the tutelage of Valentin Montanet, stands proudly as a beacon of change in this off-the radar part of Burgundy. Continuing the work of his parents (Domaines: La Cadette & Montanet – Thoden) Valentin makes beautiful Chardonnay and Pinot Noir from his limestone terroir in Vézelay, including in his range also Melon de Bourgogne – the original Burgundian variant of the signature variety of Muscadet. When tasting with Valentin we instantly knew that we have unearthed a jewel! It was refreshing to encounter a young vigneron with such a clear-headed idea of what he wants to accomplish and how to do so.

Take our word for it – you will be hearing a lot more of Domaine la Cadette and their wines in Ireland in 2024. Burgundy at these prices is rare. The quality a revelation…
