VIÑEDOS VERTICALES, SIERRAS DE MÁLAGA
Viñedos Verticales is a dream come true for two friends, Juan Muñoz and Vicente Inat who both have extensive wine making experience.
They are situated in Moclinejo, a small village in Axarquía (Málaga). It’s an area close to the Mediterranean Sea with steep slopes of arid, slate-covered soil and old vineyards.
The most important grape is the Moscatel accompanied by other white varieties like the PX, the Doradilla and the red grape Rome. The viticulture is continuing in a very traditional and heroic way on steep slopes with an inseparable link between the vineyards and the mules.
Their philosophy is to work with respect both to the vineyards and in the winery without synthetic products and with natural fermentation. Elaboration takes place in oak barrels, in fudres more than 100 years old and in trujales (concrete tanks).
This special landscape, the old age of the vineyards and the personality of the people makes Axarquía a unique place to work where small high quality production gives expressive, long lasting, and original wines.

COTA 45, RAMIRO IBAÑEZ, SANLÚCAR DE BARRAMEDA
Cota 45 is the winery of Ramiro Ibañez, named after what he believes to be an ideal elevation above the sea level, where the best albariza soil can be found. We have visited Ramiro several times and every tasting with him has been a learning curve, and a masterclass about the wines from Jerez and Sanlúcar. Ibáñez is one of the brightest young winemakers who is revolutionizing the wines of Jerez. Besides his own project, he consults other wineries like La Callejuela. These are unfortified Palominos showing the different types of albariza soil and the uniqueness of the different “Pagos”. We believe that this is one of the most exciting wine projects in the whole of Spain!

BODEGA DE LA RIVA, RAMIRO IBÁÑEZ & WILLY PÉREZ, DO SHERRY, MANZANILLA DE SANLÚCAR DE BARRAMEDA
Ramiro Ibáñez (Bodegas Cota 45) and Willy Pérez are at the vanguard of the current revolution in sherry. Their shared wine making philosophy values ‘place’ over ‘process’ and in coming together to revive the historic M Antonio De la Riva brand, they are releasing some of the most exciting wines in El Marco de Jerez today. Although the project is still in its infancy, the initial tranche of wines includes an excellent fino and a range of superb, very old, oxidative and sweet wines. Their flagship however is the youthful unfortified white wine from the Pago Macharnudo, one of Jerez’s most well regarded terroirs. De La Riva is a winery with the potential to realise and revitalise Jerez’s reputation for producing world class wines. Paddy Murphy (Sherry educator).

NEW PRIMITIVO COLLANTES, CHICLANA DE LA FRONTERA, VT CADIZ, DO SHERRY
Primitivo Collantes was established in 1908. Premises were strategically located where air circulation derived from south and west winds from the Atlantic Ocean, providing a cool and humid environment, which is essential for the development of yeast flor. Based close to the coast in the village of Chiclana de la Frontera the estate holds two main vineyards Galván and Matalián both old vines on chalky Albariza soil.
Ceballos is a less pungent and lighter Fino style, aged for 3 years under flor and comes from the Pozo Galván Estate.
NV Amontillado Fossi is spontaneous fermented and aged for 7 years under flor and a further 10 years in topped up barrel, brilliant bargain. Fino Arroyuelo from the Matalián estate with controlled spontaneous fermentation and aged for 5 years under flor
Viña Matalián is a dry not fortified Palomino from young vines with a low pH, which makes it an unoaked light, fresh and fruit driven Wine.
Fino Arroyuelo en Rama, only the best barrels from the very old solera are bottled unfiltered to order.

NEW MIGUEL CASTRO MAÍLLO, SIERRA DE MONTILLA (RIOFRIO ALTO)
Rafa discovered the wines of Miguel Castro Maillo last summer, while being back in Cadiz. Intrigued, without a further delay he decided to get in touch with the winemaker.
Miguel comes from the family of growers in Montilla-Moriles. During his studies of enology in Cadiz, he grew fond of Marco de Jerez wines, particularly enjoying the unfortified, biologically aged whites made with Palomino. Getting to know the winemakers: Ramiro Ibáñez and Willy Perez, inspired Miguel to return to his grandfather’s vines and to experiment with the old Pedro Ximenez grown on chalky albariza soil in Riofrio Alto, an area at 550 metres of elevation in the Sierra de Montilla.
The vines, between 50 – 80 years are pruned “en Vaso” in traditional way called “ojo y coillo” – the two buds that form the spur; “ojo” – “an eye” being a productive bud and “coillo” – “a tail” which will become next year’s spur.
Miguel’s fascination with old ways of winemaking, prompts him to ferment and age his PX with a veil of “flor” in old fino butts. The entry “Ojo y Coillo” is aged for 10 months. In the more elaborated “Estatico” – selection of best botas aged for 24 months – Miguel looks for the identity of the vineyard and the expression of the “flor”.
