“For three generations we have dedicated our lives to the cultivation of vines since the last Century. We own more than 100 hectares of vineyards throughout the municipal area of Rueda, in the heart of the “Denomination of Origin Rueda”, in respectable estates like “La Oliva”, “Los Obispos”, “Valdelamoza” y “El Carro de Santamaría”.
The vineyards are cultivated on the trellis system of which 90% are of the autochthonous white variety Verderjo and the remaining 10 %, the red variety Tempranillo.
For the elaboration of the white wine we only use the Verdejo variety. Harvesting is done at night to get a smooth skin of the grape due to the cooler temperature at this time of the day.
The grapes arrive at the winery and a criomaceration at low temperature is performed to extract the major quantity of primary flavours which are very potent in this variety.
The fermentation is done at low temperature in stainless steel vats respecting potential of the aromatic power of the variety.
